Now the wine is ready to start the ageing in oak barrels

100% destemmed and fermented with natural yeast

葡萄由人手用10kg箱子收成，並以攝氏兩度溫度保存72小時。其後再以人手挑選，於酒莊內直接壓搾。於缸內以低溫自然發酵12小時。發酵於600L的法國橡木桶。發酵溫度低而且有部分為乳酸發酵。
